"Shibu(i)" is used to describe something bitter, or people who remain/appear 'cool'. "Mi" means taste. Hence "shibumi" means 'bitter taste'.
Also, there is a hidden meaning to this. Since the war ages in Japan (16th century) the Japanese warlords occasionally remained motionless (like a mountain) preparing for enemies. This taste of 'coolness' (shibumi) in a warrior was an advantage since many others were just hot-headed.
