My favorite dish is the fish pie that my mom usually cooks at New Year. Its recipe has been passed down from generation to generation in our family. Firstly you need to choose the right red fish. Make sure that the fish is flash-frozen and has not been refrozen. It should be fatty but not too much. Put the fish in cold water to defrost it. Next you need to prepare the dough. For this take yeast, a glass of warm water, four glasses of flour, a tablespoon of sugar, four tablespoons of olive oil and one teaspoon of salt and then mix all of this and keep stirring until it becomes a dense mass. Then you should wait until the dough rises while you're waiting you can start cooking rice. Now the fish is defrosted and you can clean it. When the dough has risen, divide it into two equal parts, roll them out according to the shape of the baking tray, put the rice on the first layer, put the fish on top and cover it all with the second layer.
